Tomorrow we will celebrate “Forever Day”! Last year, on February 24th, we met all three of our Ethiopian children for the first time.

First we met Dimples which I wrote about HERE.

Later the same day we went to meet our little boys, which I wrote about HERE.

As you can imagine, it was one amazing day! We give our deepest thanks to God for what He has done for our children and for us.

Dimples chose the menu for tomorrow after church. We are having a feast of Honey Curry Baked Chicken (or as Dimples calls it, Curry Chicken and Yellow Rice), sticky rice, mandarin salad, sesame green beans, and fresh strawberries dipped in chocolate for dessert. There will be a fresh tablecloth and candles on the table, toasts with glasses raised, and prayers of blessing.

If you are looking for a delicious, easy recipe, here is one of our favorites:

Honey Curry Baked Chicken

3 lb. chicken breasts or thighs, cut into bite-size chunks
1 stick butter
1/2 cup honey
2 T. prepared mustard
1 t. salt
1 – 2 T. curry powder (we like it with 2 T. or even a bit more)

Place chicken in baking dish. Melt butter and mix in the rest of the ingredients. Pour sauce over chicken. Cover and bake for 1 1/4 hours at 350 degrees. Serve with sticky, white rice.

I like to put the rice on a large platter and pile the chicken and sauce on top of it.

    Congratulations on Forever Day! YAY!!

    The chicken curry sounds delicious and is one of our favorites, so I will have to give this version a try this week.

    I made the curry chicken last night and Austin and I both loved it! I chopped up roasted peanuts and we sprinkled those and coconut on top. Sooo yummy!
